Dani of Azul y Garanza, a leader in regenerative agriculture and low-intervention winemaking, introduces DIT Celler Selenita Brisat, his first orange wine in southern Catalonia. This blend of macabeo and garnacha blanca comes from vines aged 20 to 75 years in the Sierra de Llabería Natural Park, Montsant. The vineyards, planted on granite sand and surrounded by forest, are organically farmed. Once fully ripe, the grapes are hand-harvested, spontaneously fermented with native yeasts, and left on their skins. After 6 months aging on lees, the wine is bottled without fining or filtering.
